Lemon Salmon with Fresh French Beans

Salmon is a super fish to sink your teeth into. It is tasty, cooks quick and is full of healthy Omega 3 fatty acids (which are good for your brain, which you sure need to bombard you with motivational messages).  This salmon recipe is so simple that even the beginner health junkie won’t mess it up. The beans add a splash of color to your plate, and are simple to cook while the salmon’s baking. Go on, be a chef!

This recipe is for one serving. Just add one salmon fillet and a few extra slices of lemon and handfuls of green beans for each extra dish you wish to whip up. 

Step 1) Place 3 lemon slices on a sheet of aluminum foil, sprinkle Italian seasoning & garlic powder, lay on salmon filet and again sprinkle seasoning and top with remaining 3 lemon slices.

Step 2) Fold in sides of foil so salmon is wrapped in a little packet. Bake at 350°F for 15 – 20 min.

Step 3) While salmon is cooking, heat pan and cook green beans. Sprinkle with Italian seasoning and salt.

Et voila! To serve the salmon, take the packet out of the oven and let it sit for around 5 minutes to simmer in its own heat and juices. Unwrap the foil and slide the salmon onto the plate – leave the lemon on so it looks more pro! 😉
